Scientific Name: Manihot Esculenta.

Properties: According to recent studies, the leaves of cassava (manihot esculenta) contain a high level of protein, which could surpass those of power foods such as as spinach, love-lies-bleeding or 'kiwicha' (amaranthus caudatus), quinoa (chenopodium quinoa), etc.
Also: - They contain some essential amino acids and minerals, such as calcium, phosphorus, iron, sodium, and potassium.
- Rich in vitamins B1 (thiamin), B2 (riboflavin), C (ascorbic acid), beta-carotene, and niacin.
