Purple Corn
Common Name: Purple Corn, Maiz Morada.
Scientific Name: Zea mays subsp. mays.

Properties: The popular knowledge and the ancient and traditional use in Peru ascribe several properties and applications to purple corn. The last studies on this wonderful cereal reveal that the grains and cobs of this corn variety contain an important number of anthocyanins and phenolic compounds. Anthocyanins are natural colorants contained in different plants. Chemically, they are complex flavonoids. Recently, it has been reported that anthocyanins possess many biological activities:
- Natural antioxidant properties. High ability to
scavenge free radicals, which have damaging oxidative effects.
- Promote blood flow, connective tissue regeneration and collagen formation; reduce cholesterol, improve microcirculation, and have anti-inflammatory properties.
- Promising anti-mutagenic and anti-cancer properties.
- The anthocyanin content of Peruvian purple corn was found to be much higher than that of fresh blueberries (determined in 2003).
Phenolic compounds have many bioactive and functional properties:
- Antioxidant: Protects cell membranes and DNA from the damaging oxidative effects of free radicals.
- Their intake is related to a reduced risk of developing certain types of cancer, such as colon and rectal cancer.
- May lower blood pressure in hypertensive people. They can also lead to a diminished risk of cardiovascular disease.
